There’s a National Cupcake Week – who knew?!  I certainly didn’t, but was delighted when I stumbled across this news this evening!  I am going to be busy with a big baby shower cake this week and won’t have time to make cupcakes to celebrate, so I thought I’d just share a quick post on one of my recent favourites…Baileys cupcakes…

These cupcakes are deliciously chocolately, with a dash of Baileys in the cake mix, and extra Baileys brushed over them before they cool. The chocolate buttercream has a generous amount of the liqueur added, and tastes amazing.

So, I don’t have much more to say than that, and will just leave you with a picture to get you drooling and hopefully making you want to bake some cupcakes to celebrate National Cupcake week!
